\"Senegalese<\/figure>\n

Senegalese chicken maf\u00e9<\/strong> is an emblematic West African stew, appreciated for its smooth peanut-butter sauce, tender vegetables and chicken. It is commonly served with white or pilaf rice.<\/p>\n

\ud83d\uded2 Ingredients (serves 4)<\/h2>\n
    \n
  • 600 g to 1 kg chicken<\/strong> (thighs, drumsticks or pieces)<\/li>\n
  • 2 to 3 onions<\/strong>, sliced<\/li>\n
  • 3 to 4 garlic cloves<\/strong>, chopped<\/li>\n
  • 2 large fresh tomatoes<\/strong> or a small tin of chopped tomatoes<\/li>\n
  • 2 to 3 tbsp tomato paste<\/strong><\/li>\n
  • 150 to 200 g unsweetened peanut butter<\/strong><\/li>\n
  • Optional vegetables:<\/strong> carrots, potatoes, sweet potatoes or okra<\/li>\n
  • 1 fresh chilli<\/strong>, adjusted to taste<\/li>\n
  • Bay leaf<\/strong> (optional)<\/li>\n
  • Peanut oil<\/strong>, salt, pepper, herbs and water or stock<\/li>\n<\/ul>\n

    \ud83d\udc69\u200d\ud83c\udf73 Method<\/h2>\n
      \n
    1. Brown the chicken.<\/strong>
      Heat a little peanut oil in a large pot and brown the chicken on all sides.<\/li>\n
    2. Cook the aromatics.<\/strong>
      Remove the chicken. In the same oil, saut\u00e9 the onions and garlic until translucent.<\/li>\n
    3. Add tomatoes and paste.<\/strong>
      Add diced or chopped tomatoes and tomato paste. Cook for a few minutes.<\/li>\n
    4. Add the peanut butter.<\/strong>
      Loosen it with a little hot water until smooth, then add it to the pot and combine well.<\/li>\n
    5. Season and simmer.<\/strong>
      Return chicken to the sauce. Add chilli, salt, pepper and herbs. Add water or stock to halfway up the chicken and simmer gently for 40\u201355 minutes<\/strong>, until tender and fragrant.<\/li>\n
    6. Add vegetables if using.<\/strong>
      Add them 20\u201330 minutes before the end<\/strong> so that they absorb the sauce without falling apart.<\/li>\n<\/ol>\n

      • White rice or pilaf rice to absorb the sauce.<\/li>\n
