  1. Vegetable Preparation:

    • Peel and cut the sweet potato and plantain into pieces.
    • Slice the onion, mushrooms, and tomatoes.
    • Wash the cassava leaves or spinach and chop them coarsely.
  2. Sauce Preparation:

    • Heat the palm oil over medium heat in a large pot.
    • Add the sliced onion and sauté until translucent.
    • Add the tomatoes and simmer for about 5 minutes to slightly reduce the sauce.
    • Stir in the peanut butter, ground ginger, smoked paprika, and garlic powder. Mix well and cook for another 3 minutes.
  3. Adding Vegetables:

    • Add the sweet potato pieces, plantain, mushrooms, and cassava leaves or spinach to the pot with 1 liter of water.
    • Season with the cubes, salt, pepper, and chili pepper if you like spicy dishes.
    • Simmer over low heat for about 25 to 30 minutes, until the vegetables are tender and the sauce is well flavored.
