
Ingredients:
- 1 onion
- 2 fresh tomatoes
- 200 g cassava leaves or spinach
- 1 sweet potato
- 1 plantain
- 2 tablespoons peanut butter
- 2 tablespoons palm oil
- 200 g mushrooms (such as oyster or button mushrooms)
- 2 vegetable seasoning cubes
- 1 teaspoon ground ginger
- 1 teaspoon sweet paprika
- 1 teaspoon garlic powder
- 1 fresh chili pepper (optional)
- Salt and pepper
- 1 liter water
Instructions:
Vegetable Preparation:
- Peel and cut the sweet potato and plantain into pieces.
- Slice the onion, mushrooms, and tomatoes.
- Wash the cassava leaves or spinach and chop them coarsely.
Sauce Preparation:
- Heat the palm oil over medium heat in a large pot.
- Add the sliced onion and sauté until translucent.
- Add the tomatoes and simmer for about 5 minutes to slightly reduce the sauce.
- Stir in the peanut butter, ground ginger, smoked paprika, and garlic powder. Mix well and cook for another 3 minutes.
Adding Vegetables:
- Add the sweet potato pieces, plantain, mushrooms, and cassava leaves or spinach to the pot with 1 liter of water.
- Season with the cubes, salt, pepper, and chili pepper if you like spicy dishes.
- Simmer over low heat for about 25 to 30 minutes, until the vegetables are tender and the sauce is well flavored.
