Description
Dried black eye cornille beans 1 kg
Black eye beans, also called cornilles, are one of the legumes most used in African, Caribbean and Creole cuisine. With their characteristic appearance – a small black eye-shaped spot in the center of each seed – they are easily recognized and offer a tender texture and subtle taste once cooked.
Rich in vegetable proteins, fiber, iron and magnesium, they are perfect for balancing a meat-free meal. Thanks to their low glycemic index, they are also very popular as part of a healthy diet. They provide a lasting feeling of satiety, while being easy to digest if you take care to soak them well.
Before cooking, soak them in cold water for 8 to 12 hours. This reduces the cooking time to around 45 minutes and improves their digestibility. Then, you can use them in a wide variety of recipes: African sauces like seed sauce, spicy soups, warm salads or even dishes as an accompaniment to rice, semolina or cassava.
Their mild flavor goes particularly well with condiments such as onion, garlic, chili pepper or ginger. A touch of palm or coconut oil will further enhance your preparation.
Finally, their preservation is simple: store them in an airtight container, away from light and humidity. You will be able to enjoy their quality for several months.
A legume to always have on hand to naturally enrich your daily meals.
