Ground molokheya is a fine powder obtained from dried leaves of koreta, also called molokhia or jute. This green plant has been cultivated and consumed for centuries in several regions of Africa and the Middle East. It stands out for its nutritional richness and its unique texture in cooking.
Once cooked, molokheya releases a slightly glutinous consistency, close to that of okra. This makes it an excellent natural binder in sauces, soups or stews.
